I am a teacher and I will be working at a camp this summer. So, unlike the school year, I will not have access to a microwave or kitchen facilities. The camp does provide free lunches, but due to my numerous food allergies, I cannot partake.
I am looking for tasty, healthy packed lunches which do not contain:
- Corn
- Wheat
- Flax
- Peanuts
- Tree nuts
Ideas: So far I have thought of big salads, cold noodles with salad dressing, home-made lunchables with rice crackers, and cold meatloaf slices with carrot sticks.
Does anyone have other packed lunch ideas which don't need to be re-heated and are allergy safe?

Lettuce wraps - wrap deli meat and cheese, etc, in a leaf of lettuce, close with a toothpick
Hummus (I'm not sure if this is OK) with lots of veggies, and some Greek yogurt or regular plain yogurt for some protein.

I second this suggestion. Just Bento (and Just Hungry) have some great ideas both for portable lunches and meals which don't contain (or are modifiable to exclude) your allergens.
ReplyHow about cold lentil salads, with feta, chopped red pepper, green onions, something like that? A quinoa salad with avocado, peppers, your favourite cheese, a lemon/lime dressing? Potato salad, and make it with yams for a change. Vietnamese cold rolls made with rice paper wraps - no peanut sauce, but you could use a spicy sauce instead. For basic salad toppings, I like mango, hard-boiled egg, pre-shelled edamame, roasted peppers (you can get them water-packed in a jar), sprouted lentils. Good luck!
ReplyWow, those are some great ideas!! Love the lettuce wraps and sweet potato salad! What about cottage cheese with fresh fruit? That's one of my faves especially for summer!
Replygo to www.soupplantation.com and check out their menu they serve lot's of salads (that you can moderate), soups etc. You can make summer-chilled soups, CRAB meat(lemon and ketchup)or in a cold salad. Make your own granola, dried fruit Whole Food's/Henry's bulk section. Gold old sanwich and pita never go wrong.

ReplySeems like it is the carbs that are the problem for lunch. Great suggestions above such as quinoa.
Sushi, jacket potato, falafel, soba which are buckwheat noodles (not related to wheat, see wikipedia), (asian) indian pancakes, some are wheat but many are made from different beans (chickpea, mung, etc) and sometimes rice flour, check out some indian websites or better yet go to an indian restaurant and try to see what you like.
Sounds so yummy to me that perhaps I will cut out wheat and corn too and go on a culinary adventure.
